What do you need to know before you place the first fence?
The space, before anything else. These are starting points, not laws. A short-strided pony needs everything tighter, a scopey warmblood rides a long three to a forward four in the same line, and deep footing or a small indoor pulls every distance shorter. Set the number for the horses who will actually jump it.
How do you set difficulty by height and level?
Raise difficulty through the track and the distances, not just the height of the rails. A low course can be genuinely technical and a high one can ride soft, because what tests horse and rider is the accuracy the track demands - the turns, the related distances, and how much adjustability each line asks for.
At lower levels, keep approaches long, turns sweeping, and distances true so the horse can find its rhythm. As the level climbs, tighten the turns, shorten the approaches, and start setting lines a touch off a true distance so the rider has to add or leave out a stride on purpose. The height goes up too, but it is the track that separates the levels.
Height tests the horse. The track tests the rider. A good course designer always knows which question they are asking.
How do you design the jump-off?
Design the jump-off into the first-round track from the start, not as an afterthought. A good jump-off offers real choices - inside turns and forward lines that reward the brave rider without trapping the careful one - so the fast riders find seconds in the turns while a safe clear stays available to everyone else.
Build in two or three genuine decision points where an inside turn or a leave-out stride exists, and keep the shortened track rideable rather than reckless. The jump-off should sort the field on skill and nerve, not on which horse got lucky with a distance nobody could have walked.
